Seafood Shakshuka

For the sauce:

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 1 large bell pepper, diced (small sweet peppers work too! use three or four)
  • 4 to 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/8 to 1/4 teaspoon red pepper flakes, depending on how spicy you like
  • 1 large can (28 oz) crushed tomatoes
  • salt and pepper to taste

In an oven safe pan such as All-Clad, saute onion and pepper in olive oil until nicely browned then add garlic and cook a few minutes more. Add tomato paste and spices and stir to combine well and get the spices heated through. Add tomatoes and season with salt and pepper. Simmer sauce while you prepare the fish.

For the fish:

  • Cod or tilapia (we used frozen, be sure to thaw before hand. fresh would be great too I’m sure!)
  • 5 garlic cloves, minced
  • 5 tablespoons fresh lemon juice
  • 5 tablespoons olive oil
  • 2 tablespoons melted butter
  • 1/3 cup all-purpose flour
  • 1 teaspoon ground coriander
  • 3/4 teaspoon paprika
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper.

Preheat oven to 375 degrees. Combine lemon juice, olive oil and butter in shallow bowl and set aside. Mix flour and spices in a separate shallow dish. Pat fish dry then dip in lemon mixture and dredge in flour mixture. Sear fish in skillet over medium heat until browned then place atop the sauce and cook in oven for about 10 minutes. Top with some fresh parsley if you have it on hand and serve. ADK_0045


Isn’t that nice how I put the recipe first instead of making you read three or twenty paragraphs about how much my family loved this meal?

We (ok, mainly my husband) have been trying to eat a little healthier. I love every carb I see and I confess this is really good with a good crusty piece of sourdough or some focaccia. But, for a low carb and low fat meal this is super tasty and flavorful even without the bread.

I just recently got turned on to shakshuka and I’m a little obsessed with it so that was the inspiration for this dish. In our search for some low fat, low carb recipes we came across this really good Mediterranean cod recipe so we just combined the two! I highly recommend both of these recipes on their own as well.
