Pound cake update

Great Aunt Grace’s Lemon Pound Cake

Ingredients

  • 3 cups cake flour
  • 3 cups sugar
  • 6 eggs
  • 1 1/2 cups Crisco
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 3 tbsp lemon flavoring

Directions

Cream sugar and Crisco together. Add eggs one at a time. Add salt and baking powder to flour and sift together. Add flour mixture and milk to batter, alternating between the two and mixing until combined. Add flavoring. Bake at 325 degrees for 1 hour and 20 minutes.

My husband is always slightly disappointed that I don’t put icing on my lemon pound cake. I think it’s perfectly delightful without it. I did give this glaze a try this weekend and I may be a convert. It really added to the deliciousness of the cake and gave it an added brightness of flavor.
